The problem with most of that dish is trying to recreate it the med diet, and most of the great foods are availability. Eating fatty fish is not cheap in America, and it'll probably be farmed(salmon) or imported unless you live near the ocean. Adding oil is easy, but if you want to be Mediterranean, using fresh EVOO is much easier when it's cheap and local. The fresh fruits and veg they recommend will be shipped in from Florida, Arizona, Cali, Mexico or South America, picked unripe and shipped thousands of miles. Plus, just in this pic, real feta is sheep and/or goats milk, not pasteurized cows milk.
